Holland Cream

This is the white creme filling in donuts. I love it with a chocolate icing. I don't know where the name comes from, but the recipes online, which all seem to be copies of each other, all call it that.

Ingredients

  • 225 g (1 cup) sugar
  • 100 g (1/2 cup) milk
  • 200 g (1 cup) vegetable oil
  • 350 g (2 cups) vegetable shortening
  • 5 g (1/2 tsp) liquid lecithin
  • 1 tsp clear vanilla extract
  • 750 g (6 cups) confectioner's sugar

Steps

  1. Put the sugar and milk in a saucepan. Put on medium heat and bring to a boil, stirring until the sugar has dissolved.
  2. Remove from heat and let cool completely.
  3. Combine vegetable oil, shortening, and lecithin, and beat with an electric mixer on high speed to blend.
  4. Stir in the sugar mixture and clear vanilla extract.
  5. Add the confectioner's sugar 1 cup at a time and beat in. Continue to beat until the filling is thick and fluffy, 10 minutes. If it's too thick, beat in a tablespoon of water at a time until it's the correct consistency.
