Apple Cider Donuts

Donuts

  • 18 oz ( 3 1/2 cup) pastry flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 4 tbs ( 2 oz) butter
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup apple cider
  • oil
  1. Sift together the dry ingredients.
  2. Cream together the butter and sugar, then beat in the eggs.
  3. Stir in the apple cider, then add the dry ingredients and mix just until it forms a soft dough.
  4. Turn dough onto a heavily floured surface (dough is extremely soft and can be sticky). Flour the top and roll out to 1/2 inch thick. Cut with a donut cutter, and set the pieces aside a few minutes. Re-roll the scraps and cut until all the dough is used.
  5. Deep fry in oil a minute, turn over, and fry another minute. Remove to a wire rack set over a drip tray. Let cool while frying the remainder.

Glaze

  • 2 cups confectioner's sugar
  • 4 tbs apple cider
  1. Mix together confectioner's sugar and apple cider to make a thin glaze.
  2. Dip the cooled donuts in the glaze and let dry.
Serve hot, or cool and glazed.

Storage Instructions

Donuts don't store well, but can be frozen. Freeze the day they are made.
