Chocolate Fudge Frosting

  • 1/2 cup milk
  • 1 1/2 cups sugar
  • 4 tbs butter
  • 1 tbs corn syrup
  • 1/4 tsp salt
  • 1 1/2 oz unsweetened chocolate
  • 1 tsp vanilla extract
  • 1 oz fondant (optional)
  1. Boil the milk, sugar, butter, corn syrup, and salt in a heavy-bottomed saucepan until the mixture registers 234 °F.
  2. Remove from heat. Add chocolate and vanilla extract, but do not stir it in. Let cool to 110 °F.
  3. Add fondant if using. Beat 2-3 minutes until mixture just begins to lighten in color, which indicates sugar crystallization. Let rest 5 minutes to allow sugar to continue crystallizing, stirring occasionally.
  4. Spread on cake while still malleable, and allow to set.
